I made my own #vegan lentil and veggie curry tonight without following any kind of recipe and I must say it turned out pretty damn good! It’s not near as coconutty as I would have liked but it’s still pretty delicious and loaded with nutritious goodness! Happy Saturday! Just wanted to share my quick, easy and super tasty Go Green Bowl! Perhaps you can try it for dinner tomorrow & let me know what ya think! 🌱👍🏻 - Sauté diced shallots, red onions, serrano & garlic. - Add 1 1/2 cups of quinoa + 3 cups vegetable broth and bring to a boil, then let simmer on low with a lid - de-stem & chop 4 cups of kale, (save 2 cups to add to quinoa), roast the other 2 cups in the oven with light drizzle of olive oil, salt & sesame seeds. - chop broccoli florets and roast in oven with the kale - chop 2 cups of spinach to add to quinoa. - Once most of the liquid has cooked out of the quinoa, stir in a can of white beans, fresh squeezed juice from 1 lime, spinach & kale. Ready once greens have wilted. - Scoop quinoa mix into a bowl. This book, Creative Mind and Success, was given to me at the perfect time as we transition into the new year! I’ve been working on my #visionboard - setting all of my #intentions #resolutions & #2019goals and am gearing up to #manifest every bit of it...like I do every year...and this book has been such a wonderful reminder of how we absolutely co-create with the Divine Life Intelligence, simply using the laws of the universe - the law of attraction and repulsion - it is obtained throughout all nature, governing all things, both seen and unseen - it is not physical or material but mental and spiritual. Universal Law is God’s method of operation. We are making our environments by the creative power of thought. ✨ This book explains how we stand in the midst of an eternal creative power; we are living in a universe in which Mind is all; our lives are governed by the unseen laws of the universe, which when understood, enable us to exercise far greater power than we had ever dreamed of. @reynoldsurvivor kicked off the first day of the year with the #polarbearplunge in #bartonsprings at 7am and then joined me for 108 Sun Salutations in a human mandala at @delsolaustin - this has become a beautiful new year tradition we hold dear to our hearts. ✨ This is our 4th year and each time I totally forget how utterly challenging it is physically and mentally!! It grinds you to your core, rings you out and pushes you to your edge, yet somehow lifts you again! You dig in and then dig deeper - it is a moving meditation that requires great strength, stamina, patience, compassion, non-attachment, breathwork and courage...just like life. This 108 challenge is a great reminder that how you show up for yourself on the mat is how you show up for yourself in life. The yoga is the practice. The yoga wakes you and reminds you of your divine truth. The yoga prepares you to show up as your best, most authentic, divine self in the world with courage, stamina, patience, compassion and strength, using your breath to connect with yourself and not attaching the outcome. I love this practice (even though I can no longer use my arms today haha). Happy New Year! 10 Ways to Survive the Holidays as a Vegan: ✌🏻💗🌱 1 - prepare for questions! 2 - bring a Vegan dish everyone can enjoy! 3 - offer to help the cook (perhaps even bring some Vegan substitutes such as non-dairy milk, vegetable broth, vegan butter) - it can be very easy to Veganism things! 4 - be enthusiastic and supportive about any little effort other people are making (ie, your uncle says he’s stopped eating bacon for breakfast! That’s a big WIN, tell him what a great job he’s doing!) 5 - don’t snub the turkey (or ham) being served - rudeness will never win the game! Just politely say no thank you if you are offered any. 6 - NO Vegan talk at the table! Stay polite if it’s brought up. Remember, being non-judgemental and remaining non-emotional and kind will go much further to support your vegan efforts! For my morning Meditation I read Buddha’s teachings on The Mind in the Dhammapada and thought I would share... 🙏 “As an archer aims an arrow, the wise aim their restless thoughts, hard to aim, hard to restrain. • As a fish hooked and left on the sand thrashes about in agony, the mind being trained in meditation trembles all over, desperate to escape the hand of Mara (the tempter, the lord of suffering, fear, desire, attachment, greed, misfortune, sin, destruction and death). • Hard it is to train the mind, which goes where it likes and does what it wants. But a trained mind brings health and happiness. The wise can direct their thoughts, subtle and elusive, wherever they choose: a trained mind brings health and happiness. • Those who can direct thoughts, which are unsubstantial and wander so aimlessly, are freed from the bonds of Mara. • They are not wise whose thoughts are not steady and minds not serene, who do not know dharma, the law of life. They are wise whose thoughts are steady and minds serene, unaffected by good and bad. They are awake and free from fear. • Remember,this body is like a fragile clay pot. Make your mind a fortress and conquer Mara with the weapon of wisdom. Guard your conquest always. Remember that this body will soon lie in the earth without life,without value,useless as a burned log. • More than those who hate you, more than all your enemies, an undisciplined mind does greater harm.
